Quick and easy meal ideas for kids: Hot chicken sandwich

So you have some leftover rotisserie chicken from yesterday’s dinner… Instead of making the same chicken salad you always make, why not make a hot chicken sandwich? You can of course also make this with a whole rotisserie chicken just to make something different and fun. The best thing about making this dinner is that it comes together in minutes and the kids can help, which in turn, will make them want to eat what they’re just prepared. I usually use a healthier, multigrain bread instead of white bread to introduce more fiber into this meal. Simply toast 2 pieces of bread, top with the shredded  chicken, white or dark meat according to each person’s favourite. You can top the chicken with some tomato slices if you’d like but the original hot chicken sandwich doesn’t call for any tomatoes. Drizzle some gravy on the chicken then top with the second slice of bread and drizzle more gravy on the bread. You can scatter a handful of green peas on top of the sandwich to add a green vegetables to the meal. And don’t forget to serve some In Cuisin mashed potatoes ready in two minutes on the side.
