Recipe: simple vegetable and lentil stew

Now that summer is definitely over we are starting to feel the cold crisp air of fall. I always love to make hearty, hot meals for my family, this lentil recipe is also favorite because of the different vegetables incorporated into one meal and because of all the spices.


  • 2 Tbs of olive oil
  • 1 onion, diced
  • 1 clove of garlic, minced
  • 1/2 a celery stick, sliced
  • 1/2 a carrot, diced
  • 1 cup of potatoes, diced
  • 1 cup of dry lentils
  • 1 cup of tomato sauce
  • 2 cups of water
  • your choice of spices : I like to add cumin, salt, pepper, a dried mix of seasoning


  1. In a big pot, on medium heat, brown the onion and the garlic in the olive oil
  2. Add the celery, carrot and potato and cook for 2 to 3 minutes
  3. Add the lentils, tomato sauce, water and spices. Bring to a boil, reduce the heat to low and let simmer for 30 minutes
  4. Add water whenever you see it dry out
  5. Serve the lentil stew multigrain In Snax crisps
