Recipe: Grilled lamb with mashed potatoes

Grilled lamb with In Cuisin mashed potatoes

Perfect for a quick dinner any day of the week. If you don’t have a barbecue, put the lamb in the oven with the same recipe for 30-40 min on 375 degrees F. Hope you enjoy, it is a favourite one at my house.

Serves 4:

Ingredients:

  • 12 lamb chops
  • In Cuisin garlic & chives frozen mashed potatoes

For the marinade:

  • ¼ cup of extra virgin olive oil
  • ½ lemon squeezed
  • 1 tablespoon of dried oregano
  • 1 tablespoon of steak spice
  • salt and pepper to taste

Directions:

  1. Chop the lamb chops into pieces and place them in a plastic Ziploc bag
  2. Poor the marinate ingredients in the bag: the olive oil, lemon, oregano, steak spice, salt and pepper
  3. Shake the bag to cover all the meat pieces then let sit for 20-30 min in the fridge
  4. Grill the meat pieces on the barbecue for 3-4 minutes on each side (or to your liking). When you flip the meat on the other side for cooking, place the whole bag of In Cuisin garlic & chive mashed potatoes in the microwave for 10 minutes. Stir and serve with your cooked lamb
