Recipe: Roast Chicken with vegetables and In Cuisin mashed potatoes

Who doesn’t like roast chicken? I don’t know anyone who doesn’t! This recipe will quickly become one of your family’s favourite, I promise! It’s quick to prepare and cooks while you go about doing other things, like spending time with your family.

Ingredients: (for 2 people)

  • 2 chicken legs with skin on
  • the juice of 2 lemons
  • 2 tbs olive oil
  • 2 tbs oregano
  • Seasonal vegetables, washed and trimmed (whole baby carrots, parsnips, broccoli florets, whole green onions, etc.)
  • Salt and pepper to taste
  • In Cuisin butter and cream mashed potatoes


  1. Pre-heat your oven to 500 degrees
  2. Season the chicken with salt, pepper and oregano
  3. Drizzle with the olive oil and lemon juice
  4. Cook at 500 degrees for 15 minutes then lower the oven temperature to 425 degrees, add in the vegetables seasoned with salt, pepper and olive oil and cook for an additional 30 minutes
  5. Serve with a side of In Cusin butter and cream mashed potatoes
