Seared scallops with cauliflower mash

Most people are afraid to cook scallops but I absolutely adore them! They only take a couple of minutes to cook and are absolutely luscious! The trick is to cook them on really high heat for a couple of minutes only so the outside becomes crunchy and caramelized but the inside stays juicy. Sweet, plump and juicy, they go really well with some In Cuisin butter & cream mash for a healthier supper that is low in carbs. Try them tonight and let me know what you think!

Ingredients:

  • Fresh scallops (5 per person)
  • In Cuisin cream and butter mash
  • Salt, pepper
  • Olive oil

Method:

  1. Dry your scallops with paper towels and season with salt and pepper on both sides.
  2. Heat up your pan on high for a couple of minutes.
  3. Pop your In Cuisin mash in the microwave because the scallops will be done by the time the mash is!
  4. Sear your scallops for a couple of minutes on each side on very high heat in some olive oil
  5. That’s it! Enjoy with a side of In Cuisin mash.

Ingrédients:

  • Pétoncles frais (5 par personne)
  • Purée de pommes de terre crème et beurre In Cuisin
  • Sel, poivre
  • Huile d’olive

Méthode:

  1. Séchez vos pétoncles avec du papier et salez et poivrez.
  2. Chauffez votre poêle sur feu fort pendant 2 ou 3 minutes.
  3. Mettez votre purée au micro-ondes parce que les pétoncles seront prêts en même temps que la purée!
  4. Faites cuire vos pétoncles dans la poêle dans un peu d’huile d’olive à feu fort pendant 2 ou 3 minutes sur chaque côté.
  5. Voilà qui est fait! Savourez avec de la purée sur le côté.
