Weekend cocktail party: Grilled shrimp with cilantro oil
The weekend is here and I don’t know about you, but summer weekends almost always mean barbecue to me. This weekend I am planning on throwing an easy cocktail party using my barbecue as the main cooking tool. Since I don’t want to spend all night by the grill, this recipe is ideal. I can cook the shrimp ahead of time since they can be eaten at room temperature. Prepare the cilantro oil ahead of time as well and all you’ll have to do is assemble at the last minute. Enjoy the weekend everyone!
Ingredients:
- Shrimp (as many as you need)
- Salt and pepper to taste
- Olive oil
- 2 bags of In Snax multigrain pita crisps
Cilantro oil:
- 1 cup of good olive oil
- 1/2 cup of freshly picked cilantro oil
- Salt and pepper to taste
Method:
- Salt, pepper and oil the shrimp then place them on your pre-heated barbecue and cook until done. Reserve.
- Mix the oil and cilantro in a blender and season to taste
Assemble:
- Place a shrimp on a In Snax crisp and drizzle with the cilantro oil
Note: You can use another fresh herb for your oil. Parsley and basil work really well.
