Recipe: hearty, low-fat vegetable soup
Another perfect recipe to start the week with, and it’s a Meatless Monday one too! This hearty vegetable recipe will keep you warm and will satisfy you. It’s a quick and easy recipe for a Monday night.
Ingredients:
- 1/2 a cabbage, cut into bite size pieces
- 1 cup of frozen peas
- 1 cup of cherry tomatoes
- 2 bags of In Cuisin spinach risotto
- 1 liter of chicken stock
- A handful of fresh baby spinach leaves
Method:
- Bring the chicken stock to a boil and place the cabbage and risotto in. Let them cook for a few minutes.
- Add the frozen peas, the cherry tomatoes and let cook for another 5 minutes.
- Add a handful of spinach leaves just before serving and enjoy!

Ingrédients:
- 1/2 chou, coupé en bouchées
- 1 tasse de petits pois congelés
- 1 tasse de tomates cerises
- 2 sacs de risotto aux épinards In Cuisin
- 1 litre de bouillon de poulet ou de bouillon de légumes
- Une poignée de feuilles d’épinards fraiches
Méthode:
- Amenez le bouillon à ébullition et mettez-y le chou et le risotto. Laissez cuire quelques minutes.
- Ajoutez les petits pois et les tomates et laissez cuire un autre 5 minutes
- Rajoutez la poignée de feuilels d’épinards à la dernière minute et servez!
