Recipe: Italian wedding soup (straciatella)

What a perfect rainy and cold day to have soup today! This famous Italian wedding soup is made easier by the use of In Cuisin spinach risotto. Don’t wait for a special occasion to make this! With my recipe it will only take you a few minutes and any day can feel like a special occasion!


  • 8 cups of chicken stock
  • 3 Italian sausages, sliced (about 3 cups)
  • 2 bags of In Cuisin spinach risotto
  • 1 cup of parmigiano, grated
  • 2 eggs
  • Salt and pepper to taste


  1. Lightly fry up the italian sausage slices
  2. Heat up the chicken stock and empty the bag of In Cuisin in the broth. Let it cook for about 10 minutes then add the sausage slices
  3. Lightly beat the eggs with a fork and mix in the parmigiano
  4. Slowly drizzle the cheese and egg mixture into the simmering soup while stirring with a fork
  5. Season with salt and pepper and serve

  • 8 tasses de bouillon de poulet
  • 3 saucisses italienne, tranchées (plus ou moins 3 tasses)
  • 2 sacs de risotto aux épinards In Cuisin
  • 1 tasse de parmesan râpé
  • 2 œufs
  • Sal et poivre


  1. Faites légèrement revenir les tranches de saucisses italiennes
  2. Chauffez le bouillon de poulet et videz-y le sac de risotto In Cuisin. Laissez cuire une dizaine de minutes puis rajoutez les tranches de saucisses
  3. Battez les œufs légèrement avec une fourchette et mélangez le parmesan avec
  4. Versez le mélange œufs/fromage lentement dans la soupe en remuant avec une fourchette
  5. Assaisonnez avec du sel et du poivre et dégustez!
