Recipe: easy risotto-stuffed squid

Happy new year everyone! You’re probably just getting back to work today, just like I am. Getting back into the routine is not easy after a well-deserved break. This is an simple recipe to ease you back into the swing of things. It’s also a very healthy one since you’ve probably indulged a bit during the break. If you’ve never cooked squid (or calamari) don’t be afraid, it’s actually very easy – and quick! – to cook.

Ingredients: (for 4 people)

  • 2 bags of In Cuisin tomato & basil risotto
  • 8 cleaned squid
  • 2 cups of tomato sauce
  • toothpicks


  1. Cook the risotto according to the instructions on the bag and let it cool a bit
  2. In the meantime, clean the squid, rinse under cold water and pat dry
  3. Stuff the squid bodies gently with the risotto and seal the end with a toothpick
  4. Place the squids in a large shallow pan or in a glass oven-proof dish and cover with the tomato sauce. Cook them in a 350 degree oven of by simmering them on the stove top for 25 to 30 minutes

Ingrédients: (pour 4 personnes)

  • 2 sacs de risotto tomato & basil de In Cuisin
  • 8 calmars nettoyés
  • 2 tasses de sauce tomate
  • cure-dents


  1. Préparez le risotto en suivant les instructions sur le sac et laissez refroidir un peu
  2. Entre temps, nettoyez les calmars, rincez-les et essuyez-les
  3. Farcissez les calmars avec le risotto et scellez-les avec un cure dents pour empêcher le riz de sortir pendant la cuisson
  4. Place z les calmars dans une poêle ou dans un plat allant au four et mettez la sauce dessus. Faites cuire au four à 350 degrés ou dans la poêle sur feu moyen pendant 25 à 30 minutes
