Recipe: Yummy tofu guacamole
I love guacamole! Not just because of its creamy goodness but mostly because it’s so easy to make! I love to make this really quickly as an afternoon after school snack or as our movie time snack instead of plain ol’ popcorn. I also love that avocado is full of vitamin E which is great for the skin, and tofu is full of protein which leaves you feeling full and satisfied.
- 1 avocado
- 1/2 a block of tofu
- 1 garlic clove, minced
- Juice of 1/2 lemon
- 1 Tbs olive oil
- 1/4 of a small onion (chopped)
- In Snax sea salt crisps
- Mix the avocado and the tofu in a food processor (or mash them together with a big fork)
- In a small bowl mix the garlic, lemon juice, olive oil, chopped onion then add the avocado/tofu mixture.
- Add salt, pepper and seasoning to taste and serve with In Snax sea salt crisps.
