Chilled watermelon and basil soup
Fruit soups are becoming more and more popular, and that’s just fine by me. You can now find them on s0me of the finest restaurants’s menus. This is not so much a recipe as it is a guideline. You can probably make fruit soup out of any fruit, although my favourite is this watermelon soup. It’s refreshing, sweet, low in calories and just so pretty with its pinkish red colour. Cantaloupe is also a great one to make. The more water the fruit contains, the better a soup it makes. For example, you will have a hard time making a fruit soup with apples, berries, however are not a problem.
To make this soup, all you need is a blender. Place chunks of fruit in your blender, add the herb or spice of your choice, in this case, I added a few basil leaves, and blend until smooth. Serve in nice bowls with a garnish of herbs or a fruit that’s a contrasting colour, like the blueberries in this case.
