Recipe: Cheesecake with caramelized apples

Who’s up for a little dessert? A light, sweet, cheesy dessert with a side of yummy caramelized local apples sounds just about right to me.


For the apples:

  • 4 or 5 apples, sliced
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 stick of butter

For the filling:

  • 1 1/2 lbs cream cheese
  • 1 cup sugar
  • 1 tsp vanilla
  • 4 large eggs
  • 1 Tbs heavy cream or sour cream
  • Lemon peel from one lemon

For the crust:

  • The crust is the same as the one for my pumpkin pie which you will find here


  1. Prepare the crust according to the recipe found here

For the apples:

  1. Heat the sugar and water on medium heat until amber in colour
  2. Add the apples and butter and cook for a few minutes or until the apples are soft

For the filling:

  1. Preheat your oven to 350 degrees
  2. Mix everything together and place it in the cooled crust
  3. Bake for about an hour or until the cheesecake is set
  4. Serve with a side of the caramelized apples
