Recipe: Baked feta dip

I love this warm and gooey baked feta dip that you can scoop up with the sea salt or multigrain In Snax pita crisps and munch on. Whether it’s for a gathering or for dinner (yes, I’ve had this for dinner on occasion!) it’s a perfectly satisfying and delicious meal.

Ingredients:

  • 1 roasted pepper, chopped
  • 2 cups of chopped tomatoes, fresh or canned (drained)
  • 5 garlic cloves, chopped
  • 1/2 cup of olive tapenade
  • 1/2 cup of chicken stock
  • A handful of chopped parsley
  • 1 1/2 cups of crumbled feta
  • In Snax multigrain or sea salt crisps

Method:

  1. Preheat your oven to 350 degrees
  2. Mix the pepper, tomatoes, garlic, parsley and chicken stock
  3. Sprinkle with the olive tapenade
  4. Top with the crumbled feta and bake for 20 minutes
  5. Serve with In Snax pita crisps
