What better way to end this week of kid friendly meals than with dessert, brownies to be more precise! Janice Lawandi of the Kitchen Heals Soul blog was one of the participants to the I am in Contest. She made these incredibly luscious looking brownies with specks of In Snax crisps scattered in the batter. Janice is an avid baker and loves spending time in her kitchen. She studied at McGill University and completed a PhD in chemistry. She works as a Medical Writer in Montreal. She also writes for Examiner Montreal and has her own blog, Kitchen Heals Soul. Her passion is baking. She dreams of owning her own bakery. In the meantime, she bakes for her friends and family. Below is Janice’s brownies recipe. Happy baking!

Ingredients (for 16 brownies)

  • 2 cups In Snax pita crisps (1 cup of sea salt crisps and 1 cup of cinnamon crisps)
  • 1/2 cup cocoa, sifted
  • 3/4 cup (1 1/2 sticks) unsalted butter
  • 1/2 cup milk
  • 8 oz Theobroma chocolate (~6.5 bars of both dark chocolate and espresso chocolate), chopped
  • 5 eggs
  • 1 cup sugar

Method:

  1. Preheat the oven to 350°F.
  2. Prepare an 8×8 brownie pan by lightly greasing it, and lining it with parchment paper (be sure to leave an overhang of parchment to act as handles when it comes time to remove the brownies from the pan). Set the prepared pan aside.
  3. Grind the pita crisps in a food processor until you have fine crumbs (don’t worry if there are a few larger crumbs).
  4. In a medium bowl, whisk together the pita crumbs and the cocoa, and set them aside.
  5. Melt the butter, milk, and chocolate over low heat, stirring constantly. When the chocolate and butter are just melted, remove the pan from the heat, and set aside to cool slightly.
  6. In the bowl of an electric mixer fitted with the paddle attachment, beat together the eggs and sugar until they are combined.
  7. With the mixer running on low speed, slowly pour in the butter/milk/chocolate mixture. Mix on low to combine. Scrape down the sides of the bowl.
  8. With the mixer still running on low speed, add the dry ingredients slowly. Mix until just combined, scraping down the sides of the bowl when necessary.
  9. Pour the brownie batter into the prepared pan. Bake for 40 minutes, then remove from the oven to a wire rack to cool.
  10. When the brownies are completely cooled, remove them from the pan using the parchment overhang, and slice them on a cutting board.

Ingrédients (pour 16 brownies)

  • 2 tasses de croustilles de pita In Snax (1 tasse au sel de mer et 1 tasse à la cannelle)
  • 1/2 tasse de cacao tamisé
  • 3/4 tasse (1 1/2 bâton) de beurre sans sel
  • 1/2 tasse de lait
  • 8 oz de chocolat Theobroma (~6.5 barres de chocolat noir et de chocolat à l’espresso), haché
  • 5 œufs
  • 1 tasse de sucre

Méthode:

  1. Préchauffez votre four à 350°F.
  2. Préparer votre plat de 8×8 en le beurrant légèrement puis en y déposant du papier parchemin en laissant dépasser le papier des 2 côtés pour pouvoir mieux démouler les brownies.
  3. Pulvérisez les croustilles de pita jusqu’à obtention d’une poudre (ne vous en faite spas s’il reste quelques morceaux plus gros).
  4. Dans un bol, mélangez les croustilles et le cacao et réservez.
  5. Sur feu doux, chauffez le lait, le beurre et le chocolat en mélangeant contamment jusqu’à ce que le beurre et le chocolat fondent. Retirez du feu et laissez refroidir légèrement.
  6. Battez le sucre et les œufs ensemble puis rajoutez le mélange beurre/chocolat/lait à basse vitesse et mélangez bien.
  7. Rajoutez les ingrédients secs et laissez tourner lentement jusqu’à ce que le tout soit bien mélangé.
  8. Versez la pâte à brownies dans votre plat et mettez au four pendant 40 minutes. À la sortie du four, laissez refroidir complètement.
  9. Quand les brownies sont froids, servez-vous du papier parchemin qui dépasse pour les démouler et coupez-les en 16 carrés. Bon appétit!
