Chicken Saltimbocca

This great traditional Italian recipe comes to us from Lorena Rossi, who owns a lovely gift boutique on St Laurent in Little Italy. In her own words: “thoughts of sage bring to mind Saltimbocca, one of the most classic Roman dishes. The name literally translates as hopinthemouth.  Traditonally, they are made with veal cutlets topped with prosciutto and sage.  I opted for chicken cutlets and stuffed them with mozzarella and prosciutto.  I would have put sage, but the In Snax multigrain pita crisps already have quite a few herbs.”

So here it is, a classic Italian dish for you to try this weekend.


  • Skinless, boneless chicken breasts
  • Prosciutto
  • Mozzarella or a cheese of your choice
  • In Snax Multigrain & Garden Herbs Pita Crisps, crushed
  • Egg, lightly beaten
  • Flour mixed with a bit of salt and pepper


  1. Pre-heat your oven to 350 degrees
  2. Butterfly* the chicken breasts and place the prosciutto and cheese in the center
  3. Coat the chicken in flour (dust off the excess), then coat in egg and finally coat in the crushed pita crisps
  4. Bake in the oven at 375 for about 15 to 20 minutes or until the chicken is done

Cheria’s note: You can serve these chicken Saltimbocca with a side of delicious In Cuisin mashed potatoes! :)

* To butterfly a chicken breast: Use a sharp knife to cut through the breast horizontally until you obtain a “pocket”. Be careful not to cut all the way through the breast!

  • Blancs de poulet sans os ni peau
  • Prosciutto
  • Mozzarella ou fromage de votre choix
  • Croustilles de pita multigrains In Snax écrasées
  • Oeuf, légèrement battu
  • Farine assaisonnée de sel et de poivre


  1. Préchauffez votre four à 350 degrées
  2. Faites une poche dans chaque blanc de poulet et placez-y une tranche de prosciutto et votre fromage
  3. Placez votre blanc de poulet dans la farine (enlever l’excédent) puis dans votre œuf et enfin dans vos croustilles In Snax écrasées
  4. Faites cuire au four pendant 15 à 20 minutes ou jusqu’à ce que le poulet soit cuit
