Recipe: Peanut Noodles

Easy peanut noodle recipe

I love sweets and anything with peanuts, so any reason is a good reason to add a taste of peanut to a meal. When I found this recipe, I immediately tried it, I also switched it up to make it more kid-friendly with spaghetti instead of rice noodles.


  • 2 Tbs of soy sauce
  • 2 Tbs of oil (sesame or vegetable)
  • 2 Tbs of peanut butter
  • 1 Tbs of apple cider vinegar
  • Your choice of rice noodles or spaghetti (2 oz per serving)
  • A handful of spinach leaves
  • A few roughly crushed In Snax multigrain crisps


  1. Fill a pot of water, add salt and bring to a boil
  2. Add your noodles/spaghetti and your spinach teared up in pieces
  3. Cook the noodles according to the directions on the package
  4. In the meantime, make the sauce by mixing the peanut butter, oil, vinegar and soy sauce
  5. Add the sauce to the drained noodles and spinach and mix well
  6. Top with the crushed pita crisps for extra crunch

Note: you can add some vegetables like carrots or green beans to the mix, or even some chicken or shrimp
