Banana cranberry bread

My children adore bread, if they could they would get a piece of bread at every meal. I always try to accommodate that love in their meals but I sometimes think that too much bread is just that, too much bread. So I like switch it up a bit with this recipe for homemade banana and cranberry bread.

Ingredients:

  • 1 cup of mashed bananas
  • 1/3 cup of cranberries (dried)
  • 1/4 cup of nuts (walnuts and almonds) cut in small pieces
  • a pinch of salt
  • 1/3 cup of sugar
  • 2 eggs
  • 1/3 butter (melted)
  • 1/2 teaspoon of baking soda
  • 2 teaspoon of baking powder
  • 1 3/4 cup of whole wheat flour

Method:

  1. Pre-heat your oven to 350 degrees F
  2. In a big bowl mix the flour, the baking powder, the baking soda, and salt
  3. In another bowl mix the sugar and butter, add the eggs and the bananas while mixing
  4. Mix both mixtures together then add the cranberries and nuts
  5. Mix it all well. Put your mixture in a loaf pan already buttered up (I sometimes use cupcake molds too)
  6. Bake for 45 to 60 minutes. To make sure that your bread is ready, a toothpick inserted in the center of the cake will come out either clean or with only a few crumbs clinging to it.
