Preserving summer goodness: roasted peppers
Soon enough, there will be bushels of multi-coloured peppers at all the markets around town. You can pick up as many as you want for a fairly reasonable price. In this second part of my “preserving summer goodness” series, I’d like to share with you a good trick to preserving summer peppers.
This is the easiest thing in the world! All you have to do really is char the peppers on the barbecue then peel and desseed them. Be careful as they will be hot! You can then store the roasted peppers in a jar with some olive oil in the fridge or simply put them in ziploc bags and freeze them. They are a perfect addition to salads, pastas and sandwiches. I love having them as a snack on some multigrain In Snax with a little bit of fleur de sel sprinkled on them. They taste so much better than the jars of roasted peppers available at the grocery store. You can also make an amazing roasted pepper sauce with them by blending them with some garlic, herbs, olive oil and a splash of vinegar.
